Caymus comes from the Wagner family in Rutherford, Napa Valley. Chuck Wagner and his parents, Charlie and Lorna, founded the winery in 1972. The family had already been farming grapes in the valley for decades. Today, Caymus is still family-owned, and the Napa Valley Cabernet remains their signature wine.
This is not a lean, austere Cabernet. Caymus is known for a generous house style: deep colour, ripe dark fruit, and soft, polished tannins. On the nose you typically get blackberry, black cherry, cassis, and plum, with cocoa, vanilla, espresso, and warm baking spice from French oak. On the palate it is full-bodied and velvety, with concentrated fruit, a creamy texture, and a long, smooth finish. It is approachable when young, which is a big part of why it stays so popular.
Vintage can change the details slightly, but the style stays consistent. Serve it at cool room temperature, around 16°C. Younger bottles open up nicely if you pour them and let them sit for 30 to 60 minutes before drinking.
